Food Planning and Prep

With my new early wake up time and Cailyn's more rigorous schedule we've been having a hard time planning meals and getting to Mommy and Daddy dinner before 8 or 9 o'clock and not having to order takeout.

So this weekend I pulled a few recipes, planned my shopping list and planned my menus. I tried to pick a majority of the meals that can be made in the crockpot to save us some time in the evenings. So yesterday I borrowed a recipe for dinner from my Mommy friend Julia for Chicken and Biscuit Casserole and then Curt and I had the leftovers for lunch today.

Tonight we are having slow cooker spaghetti and meatballs. It's an interesting recipe because you mix the meat with a packet of stove top stuffing mix and then put the meatballs in the crockpot with sauce and vegetables over them. So we'll see how this one turns out too. It seems like it will make a lot so I'll probably put some of these in the freezer for another date.

On the list for the rest of the week is BBQ Chicken Pot Pie (from my friend Donna), Beef Stroganoff and a few other tasty bits.

Uh, the meatballs were ok, not going to be my favorite I think.
